Ingredients
For Boats:
6 small white cucumbers, about 4 inches long
1/2 tsp. salt
For Filling:
1/2 cup shell macaroni, cooked
1/4 cup French beans, chopped and boiled
1/4 cup carrot, chopped and boiled
1/4 cup cucumber, chopped
1 tbsp. celery, chopped
Salt and pepper to taste
1/4 cup walnuts, chopped
1/3 cup mayonnaise
Peel cucumber only if the skin is tough. Create so cucumber is hollow lengthwise, like the shape of a boat. Cut a base to make it stand.
Sprinkle a little salt in each cucumber boat and place upside down allow water to drain out.
Mix all filling ingredients and stuff in the prepared boats.
Serve immediately or chill. Six servings.
