Ingredients
1 cucumber
1 small green pepper
2 oz diced peanuts
1 tbsp. coarse coconut
2 tbsp. chopped mint
Juice of 1/2 lemon
1 tsp. sugar
Salt
2 tbsp. oil
1/2 tsp. black mustard seeds
1/2 tsp. cumin seeds
Pinch of cayenne
Salt and freshly ground pepper
Peel, seed and dice cucumber. Remove seeds and dice pepper. Place vegetables, nuts and mint in a bowl. Combine lemon juice and sugar; add salt to taste and pour over vegetables. Heat oil in fry pan. Add mustard seeds and when they start to pop, add the cumin and cayenne. Stir well. When spices turn a darker color, pour the mixture over the salad.
